The Catering Experience at the Big Fig is a course which gives you the skills and experience you need to get into catering. The course starts with 3 day sessions at the Big Fig working kitchen in Brighton and then continues in a work training placement for 2 weeks at Eco Chateau in France. You will learn food safety, how to plan and cost menus, essential knife skills, a wide range of food preparation and cooking techniques and have the opportunity to achieve City and Guilds Level 1 Award in Introduction to the Hospitality Industry which includes the Food Safety Level 2.
When you have completed the course, we also provide volunteering, work placement opportunities and on-going support in Brighton to help you into the catering career you want.
The course is fully funded if you meet the referral criteria and includes travel, accommodation and food in France. To participate you need to be 18 or over, experiencing barriers to work, interested in getting a career in catering, able to commit to the full 3 week project ( 2 of these weeks being full time in France), a current valid passport (visa if required) and keenness and willingness to learn and be full involved in all aspects of the course.
